- 500 ml of cream (for cooking, because it is thicker and the fat is necessary to preserve all the properties of cannabis).
- 2 tablespoons of butter or olive oil (although there will always be more fat in the butter).
- 75 grams of sugar (or if you prefer another sweetener to taste that is healthier, no problem either: stevia, agave, maple, coconut or birch syrup, for example).
- 2 ripe bananas (so that there are no problems when preparing them and because they will give more flavor to your ice cream.
- A pinch of salt (you know all desserts have it)
- Rum (2 tablespoons) with honey ( 5 tablespoons; if the honey is pure, better than better)
Ingredients for making ice cream with cannabis
These would be the basic ingredients, but from here you can add others that you like to have in the ice cream. Some people put cookies, coconuts, nuts or mint on it, among other flavors. I am trying to reach you with some questions on the making of ice cream. You said you have tried several recipes and I have some questions. I make a lot of ice cream (as a hobby) and I know the part of the ice cream making process very well. It’s the marijuana side I need help with.
I have some marijuana in liquid form. I am wondering if you have tried using it for making ice cream? I am wondering your thoughts about using the liquid as I won’t be roasting to decarboxylate before I proceed with making the ice cream?
As for the recipes you mentioned you tried but did not discuss here. Are there some types of ingredients you would recommend I skip?
Additionally, I have a friend who uses marijuana for medicinal reasons. She is more into the CBD side. She would like me to make her some ice cream. The liquid I have is 5.3 mg/ml THC & 4.95 CBD. Part of me thinks using the liquid will be simpler in the process but certainly not inexpensive! I’m wondering your thoughts before I proceed in the hopes that you may save me some steps?
Also, I am happy to share my results with you as time goes along if you are interested.

Hi Marc, you can use the liquid marijuana to make the ice cream, it’s a good alternative. If your friend wants to use the ice cream as medicine, the ratio of THC to CBD of 1:1 is correct.

I’ve come up with one of the salted caramel best recipes that doesn’t really have the grassy taste that this one will give you.
You will need an ice cream maker though
Ingredients you will need for the caramel:
1/4 cup (60 ml) water
1 cup (200 grams) granulated sugar
2/3 cup (160 ml) heavy whipping cream
3 tablespoons (45 grams) unsalted butter , cut into tablespoon-sized pieces
40ml cannabis coconut oil
1 teaspoon vanilla extract
2 table spoons dessicated coconut
1 teaspoon salt
300gm full fat milk
2 egg yolks
15ml vanilla essense
For the caramel
In a heavy bottomed saucepan, heat the water and sugar over medium heat. Make sure to use a saucepan that’s a little bigger than what you think you will need. Stir constantly until the sugar has dissolved and the mixture starts to bubble just a little.
Increase the heat to high and bring to a boil, stop stirring completely. Let the mixture continue boiling until it turns an amber color, this could take anywhere from 4-12 minutes.
Remove from the heat and slowly whisk in the heavy cream. The mixture will bubble up quite a bit, so make sure to do this very carefully. Then, mix in the butter, cannabis coconut oil , vanilla, dessicated coconut and salt one at a time.
Pour the caramel sauce into a dish and allow to cool completely, then cover tightly and store in the refrigerator. The caramel sauce will thicken up some once it’s cooled and refrigerated.
Mix caramel, milk and cream and heat on low until completely dissolved to make base mixture
In a separate bowl whisk egg yolks,sugar and vanilla essense until stuff and voluminous
Add hot base mixture slowly drop at a time into the eggs and stir until dissolved. Put this back on low heat until simmering but don’t allow to boil for 6-10 minutes until the mixture is a bit thick. Allow to cool and chill in the refrigerator for an hour then transfer to an ice cream maker for 30-45 minutes. Empty ice cream maker bowl contents into a container and freeze for the next 3-4 hours till hard.

This classic recipe first appeared in The FADER magazine in the summer of 2013.
Considering the end goal, making marijuana edible can be a comically precise process, often entrusted to industrious professionals or abandoned midway by stoned hobbyists. Pastry chef Katy Peetz, formerly of Roberta’s in Brooklyn, has developed a polished recipe for giggle-inducing, weed-infused ice cream. Her method requires a home ice cream machine and some patience. But if you don’t want to bother with those, you can still enjoy her done-in-no-time weed cream. For a quick slushy treat, Peetz recommends mixing the weed cream with coconut milk, pouring that over shaved ice and adding berries or slices of frozen banana. The dessert’s potency is up to you — stick with five grams of weed to keep it light.
First, make a simple weed cream
Yield: 1 ½ cups
2 cups heavy cream
5-10 grams marijuana, broken up
1. Combine the heavy cream and marijuana in a medium saucepan. Cook just below a simmer for one hour.
2. Strain through cheesecloth or fine mesh. Pour the infused cream into a mixing bowl. If too much has evaporated, add some non-infused cream until you’ve got 1 ½ cups.
3. Mix with a hand blender for 30 seconds.
4. Chill until ready to use.
Use that to make the ice cream
The following recipe creates a plain, white ice cream base. To add flavor, steep your milk with vanilla or herbs before mixing it with the weed cream. Peetz likes balancing out marijuana’s earthy flavor with a sweet and sour strawberry rhubarb topping, made by cooking the fresh fruit with sugar until the water has evaporated.
Yield: about 3 quarts
1 ½ cups weed cream
4 cups milk
1 cup sugar
3 ½ tbsp honey
¾ cup dry milk powder
Scant tsp xanthan gum
3 large eggs
½ tsp kosher salt
1. Heat the weed cream and milk to a simmer in a medium saucepan.
2. Turn off the heat, and add the rest of the ingredients except for the eggs and salt.
3. Whisk to dissolve the sugar and milk powder. (The xanthan gum may not dissolve totally. This is okay.)
4. In a separate bowl, whisk the eggs until frothy and temper with a small amount of the hot cream mixture.
5. Pour everything back into the saucepan. Turn the heat back on low and slowly bring the mixture up to 173 degrees, stirring the bottom of the pot often with a rubber spatula.
6. Remove from heat. Add salt.
7. Blend the mixture on a blender’s low setting for one minute.
8. Strain through a fine sieve into a container. Place the container in an ice bath. Let chill completely.
9. Add honey or maple syrup to sweeten. For a bright flavor, add a squeeze of lemon.
10. Spin the liquid mixture in your ice cream machine and serve.
